For a third of San Antonio’s history, the Oyster Bake has been part of the fabric of the community.
What started as a St. Mary’s University alumni gathering with a handful of people in 1916 on the banks of the San Antonio river downtown has grown to a premier Fiesta® San Antonio event with over 70,000 patrons and more than 7,000 volunteers.
86 St. Mary’s University students received Alumni Association scholarships / financial support in 2025.
7,000+ volunteers, contributing more than 50,000 volunteer hours, participate in the event.
Listen to great music on 3 main stages (Tejano, Country and Rock) with local and national acts for entertainment. 
Serving up 100,000 Oysters (baked, fried and raw), 36,000 Chicken on a Stick, and 9,000 Steak on a Stick! 
10,000 lbs. of oyster shells are recycled by sink you shucks.
